1oz Spirit of Prohibition Gin
.5oz Lemon Juice
.5oz Lavender Simple Syrup
Top with Champagne or your favorite Sparkling Wine

Combine ingredients, except sparkling wine, in a shaker with ice and shake vigorously until well diluted. Strain into a flute glass and top with Champagne. Garnish with a lemon peel.
